Chocolate Log Cake

Two more books to add on to my collection. Out of  all the cook books I have, I am most satisfied with these two. If anyone of you would like to buy cook books, I would suggest you to get Rose Levy's book. The recipes and methods are stated so clearly, and you wouldn't go wrong if you follow them.

These two books arrived just right before Christmas and I just have to test the recipe out. Thus I've decided to make a Chocolate Log Cake for a Christams event with my friends. My friends  requested for something that is made of chocolate with a chocolate frosting but yet less sinful and I managed to find one from the book.

I've decided to frost the cake with chocolate ganache. I halved the ganache recipe because I only wanted a thin layer of ganache since the cake is very light. So if the frosting is too heavy, the cake will fall and lose it's shape. After frosting, place the cake back into the fridge for at least 30 minutes to set the ganache and to firm up the cake before putting on the decorations.

I only spread on a thin layer of whipped cream since my friends called for a less sinful one, but if you want that looks rounder, add in more whipped cream.

There are so many other ways of filling up and frosting this cake. You can just dust some icing sugar on the top and slice them up and serve as a chocolate fruit cake roll.

Bake and Shake: Sultanas Scones

Happy New Year! Happy 2012! I wish all of you the best of health and prosperity!

Sorry that it took me quite a while to get this posted. I was too busy preparing for Christmas and New Year. Now that I am stuck at home recuperating from a minor surgery on my right foot I finally find time to post this up.

A few weeks back, I had a scone 'masterclass' and I taught my Aunt, cousin and grandma how to make scones. And I used the recipe that I was taught in school.

Scones are really simple to make, the only thing to be careful is not to overwork your dough or else you will have a very hard and dry scone.  You can use lemon zest instead of orange zest or only put zest and not sultanas and vice versa. Or you can just make plain scones! Play around with this recipe to make some yummy scones.

How to enjoy: Cut scones into half and spread on your choice of jam and a cup of your favourite tea! Yums!

Bake and Shake: Smooth Berry Buttercream

Buttercream goes best with cupcake, but I am never a fan of those grainy textured buttercream that is always too sweet but this buttercream recipe that I'm going to share with you is different. It is creamy, smooth and not too sweet.

*CAUTION: Care should be taken when making sugar syrup. They are extremely hot and will stick on skin when spilled or splattered causing serious burns!

Bake and Shake: Rainbow Cupcakes

I'm back from my hiatus. Yay! I'm finally back in Singapore and after a few days of jet lag, shopping and some well deserved rest I've got my hands back on baking! As requested from my friends, they wanted to learn how to make rainbow cupcakes thus I've decided to hold a cupcake 'masterclass' teaching them how to make cupcakes. To be honest, I've never tried making rainbow cupcakes before so I was really excited to see the end product.

If you want to find something to bake with your friends, Rainbow Cupcakes would be ideal since it's fun and simple to make.

Strawberry Shortcake Biscuit

(This is a scheduled entry, I am still on hiatus. Will be back soon!)
I baked this last year for one of my close friend's birthday. I was thinking of making him something with strawberries and mango since it's his favourite fruits but at the same time I want to bake something he have never had before. So I've decided on Strawberry Shortcake Biscuit with Strawberry and Mango Coulis
Shortcake Biscuit - This recipe makes 3, so if you want you have to increase the measurement

Mango Cupcakes

When I have the urge to bake something, I'll usually bake cupcakes because they are really simple to make and most important of all, they are always so yummy!

This recipe came about when my Dad tricked me to eating a really sour mango and was surprised that I did not find them sour. So he told me to finish all the four mangoes he bought in the next few days since no one at home will be eating them because they are too sour. So to prevent myself from falling sick eating all those mangoes, I came out with an idea and decided to add them into my cupcakes. And because this cupcake recipe is not as sweet, I've to add a homemade marshmallow to even out the sourness from the mangoes.

Jm's Chicken Pie

I've always love chicken pie, I used to have chicken pie from Hans at least once a week. So one day I thought, why not try making one myself? And after the very first one came out decent (The photo on top) I made this for grandma & grandpa for their birthdays instead of cakes since they can get to enjoy it and I have cousins who requested for it. Even Dad loves it! (Finally Dad is eating something I bake!) And since almost everyone is calling it Jm's chicken pie, I shall just name it Jm's chicken pie.
